hmm. i'm making something for a chili cookoff and i messed up the ratios and it needs thickened.

this is only chili in the loose sense that it has chili powder, onions, cumin, a few roasted green peppers, and beans. most of the base is mushrooms, carrot, chard. it's... kind of a peppery vegetable soup at this point.

what to add? i think i have a can of black beans, but...

as a veteran of a good dozen chili cookoffs in hippie country by now, i have learned a few things:

- if you want to make the vegetarians/vegans happy, you can do that. if you want to _get votes_, you can cook meat. i usually opt for the former and accept that most people will treat a meatless option as being somehow poisoned. one of these days i'm going to pretend there's pork in there and see if i can win.

- talking a good game is slighly more important than making a good chili.

- other major factors in winning: "did your pot of chili outlast the other pots while people were still voting" and "are the people tallying the vote in the tank for you or not"

@brennen What’s the vegetarian protein of choice?

@vruba i usually rely on finely chopped mushrooms and beans to kinda fill that role. sometimes lentils. once in a while i add a package of whatever ground fake meat substance i have around - usually impossible or some sausage brand that comes in a plastic tube i'm forgetting the name of.
