As is tradition… this thanksgiving I am going to stumble into a large cooking project with nothing but optimism and google. This year it will be attempting to spatchcock a 22 lb turkey.

I wonder if it is a problem to cut yourself on raw turkey…

Phewf -- I did manage to do it (I will not include pictures of the process because raw meat is gross).

Those tiny little kitchen sheers were... not as useful as I hoped.

Next project: I don't see how this is going to fit in my oven, but that's a problem for tomorrow Dan (we host our thanksgiving on Friday).

OK so I think I need to make it flatter before actually roasting it.

My best idea right now is to put the pan on the ground, put another pan on top of it, and jump on it a few times.
